Tomato Curry Rice and Beans/Lentils
Try this easy spiced tomato curry rice with lentils and you will get an exotic side dish in no time!
Servings: 4 people
- 6 cups Cooked rice I used a mix of white basmati and purple/black rice
- 3 cups Cooked lentils or sub with canned beans
- 3/4 cup Strained tomato
- 2 tbsp Curry powder
- 2 tbsp Cooking oil
- Salt to taste
- Red pepper flakes
- Coriander leaves
Heat frying pan with cooking oil. Add curry powder and drained tomato to pan and saute until fragrant
Add rice and beans/lentils to pan. Mix well with a spatula and add 1/2 cup water if it is sticking
When rice and beans/lentils are warmed up thoroughly, remove from heat, garnish and serve!
