Kelp Soup with Watermelon Radish

- 1/4 cup Dried shredded kelp
- 1.5 L Filtered water
- 2 handfuls Spinach rinsed and drained
- 1 Potato thinly sliced
- 1/2 Watermelon radish large, or 1 medium or 3 small ones
- 2 tbsp Gluten-free soy sauce or miso paste
- Salt to taste
Fill a pot with filtered water and add kelp, bring it to a boil
Add potato to pot, let boil until desired softness
Turn off heat and add watermelon radish
Add soy sauce and salt to taste
Add spinach and stir to wilt, then serve and enjoy!
