A quick kelp soup that is flavor and nutrient-packed!

Kelp is such a flavor-booster and also super food in its nutrients and cooling nature.

Feel like soup today but still want it a little crunchy and fresh? Paired with just wilted spinach, satiating potatoes and crunchy watermelon radish, this kelp soup is prefect as a vegan light meal or compliment to your favorite light-tasting meal! (Did somebody mention sushi? 😍)

The Asian soup culture!

Growing up in in Cantonese family, it is a common family tradition that every dinner is served with a soup. The soups were typically comprised of meat, veggies and Chinese herbs boiled for hours. So much thoughts were put into the seasonality of ingredients, as well as Chinese food therapy knowledge accumulated through the generations.

However for my mom and me, we are both impatient home cooks so these slow cooked soups are not for us! Instead, we love making these quick boil type of soups. It’s simple, done in a breeze and instantly add volume to the meal!

Kelp Soup with Watermelon Radish

Delicious Japanese inspired kelp soup with watermelon radish, spinach and potatoes. Ready in 20 mins!

Ingredients

  • 1/4 cup Dried shredded kelp
  • 1.5 L Filtered water
  • 2 handfuls Spinach rinsed and drained
  • 1 Potato thinly sliced
  • 1/2 Watermelon radish large, or 1 medium or 3 small ones
  • 2 tbsp Gluten-free soy sauce or miso paste
  • Salt to taste

Instructions

  • Fill a pot with filtered water and add kelp, bring it to a boil⁠
  • Add potato to pot, let boil until desired softness⁠
  • Turn off heat and add watermelon radish⁠
  • Add soy sauce and salt to taste⁠
  • Add spinach and stir to wilt, then serve and enjoy!⁠
