Potato and Leek Stew with Hot Dog and Lentils
This stove top OR slowcooker potato and leek stew is so easy to make and packed with flavor. Best served with the sweet and savory corn dog muffins!

Ingredients

Brown or green lentils
dried

Nitrate-free gluten-free hot dog sausages

(yes, no broth needed!!!)

Instructions
Wash and sort lentils (optional: do this step >12 hours before cooking to sprout the lentils), set aside in 2L of water
Peel and dice potatoes into 1cm cubes
Cut onion into thin strips, cut leek into rings
Stove-top method
Heat a pot with cooking oil and saute onion and leek until they are browned and fragrant
Cut hot dog sausages into thin slices and add into the onions and leeks, saute until browned
Add potatoes, lentils and water into pot and bring it to a boil
Simmer until lentils and potatoes are cooked
Slowcooker method
Saute onion and leek in a pan until fragrant
Cut hot dog sausages into thin slices and add into the onions and leeks, saute until browned
Add sauteed ingredients, potatoes, lentils and water into slowcooker
Cook on high for 2 hours or low for 4 hours
