Potato and Leek Stew with Hot Dog and Lentils

This stove top OR slowcooker potato and leek stew is so easy to make and packed with flavor. Best served with the sweet and savory corn dog muffins!

Ingredients

  • 2 large Potatoes or 3 medium⁠
  • 1 cup Brown or green lentils dried
  • 2 Nitrate-free gluten-free hot dog sausages
  • 1/2 bunch Leek
  • 1/4 Onion⁠
  • Cooking oil⁠
  • 2 L Water (yes, no broth needed!!!)
  • Salt to taste

Instructions

  • Wash and sort lentils (optional: do this step >12 hours before cooking to sprout the lentils), set aside in 2L of water
  • Peel and dice potatoes into 1cm cubes
  • Cut onion into thin strips, cut leek into rings

Stove-top method

  • Heat a pot with cooking oil and saute onion and leek until they are browned and fragrant
  • Cut hot dog sausages into thin slices and add into the onions and leeks, saute until browned
  • Add potatoes, lentils and water into pot and bring it to a boil
  • Simmer until lentils and potatoes are cooked

Slowcooker method

  • Saute onion and leek in a pan until fragrant
  • Cut hot dog sausages into thin slices and add into the onions and leeks, saute until browned
  • Add sauteed ingredients, potatoes, lentils and water into slowcooker
  • Cook on high for 2 hours or low for 4 hours
