Just needing some comfort food NOW as one of my tomato plants bent under the storm before I could get a stake for it… This stove top OR slowcooker potato and leek stew is so easy to make and packed with flavor. Best served with the sweet and savory corn dog muffins!
Compared to sad cold salads, I much prefer to have chunky hearty stews for summer dinners (especially a rainy day like today!)! Skip the blending so that you will get the flavorful liquid that goes down easily and chunky pieces that adds interesting texture to your meal!
What kind of potatoes are good for potato and leek stew?
Traditionally potato stews are made with white potatoes, the Yukon gold variety in particular. It tends to hold its shape better after cooking in liquid and not get mushy. See the sharp edges of the potato cubes in picture?
If you get you hands on some russet potatoes instead, you can definitely use them in this recipe as well. Remember to peel the skin as it can get pretty rough! Apparently potatoes makes its way into the dirty dozen list too so it is best to peel them! Here is me and my mom’s favorite vegetable peeler (affiliate link).

Potato and Leek Stew with Hot Dog and Lentils
Ingredients
- 2 large Potatoes or 3 medium
- 1 cup Brown or green lentils dried
- 2 Nitrate-free gluten-free hot dog sausages
- 1/2 bunch Leek
- 1/4 Onion
- Cooking oil
- 2 L Water (yes, no broth needed!!!)
- Salt to taste
Instructions
- Wash and sort lentils (optional: do this step >12 hours before cooking to sprout the lentils), set aside in 2L of water
- Peel and dice potatoes into 1cm cubes
- Cut onion into thin strips, cut leek into rings
Stove-top method
- Heat a pot with cooking oil and saute onion and leek until they are browned and fragrant
- Cut hot dog sausages into thin slices and add into the onions and leeks, saute until browned
- Add potatoes, lentils and water into pot and bring it to a boil
- Simmer until lentils and potatoes are cooked
Slowcooker method
- Saute onion and leek in a pan until fragrant
- Cut hot dog sausages into thin slices and add into the onions and leeks, saute until browned
- Add sauteed ingredients, potatoes, lentils and water into slowcooker
- Cook on high for 2 hours or low for 4 hours
