- 2 Sweet potatoes sliced lengthwise
- 1 tbsp Olive oil
Sandwich toppings
- 6-8 slices Leftover roast beef cooled
- 2 Radishes thinly sliced
- 1 bunch Baby spinach rinsed
- 1/2 Tomato sliced
Coat sweet potato slices with a thin layer of olive oil
Arrange sweet potato on a lined or non-stick baking sheet for toaster oven
Start toasting in a toaster oven (just to save some $$! I used my counter-top @cuisinart steamoven ) on high (6 or 7), or bake at 475F for 7 mins or until crisp and golden
Flip sweet potatoes and toast or bake on the other side for another 3-5 minutes
Build your favorite sandwich with the sweet potato toasts fresh out of oven!
