The roast beef slices were from our Moist Slowcooker Roast earlier, what better way to use the delicious leftover than slicing them cold and thin and enjoy a big satisfying bite!⁠

No gluten-free bread? No problem!

I understand that gluten-free bread can be hard to come by. They are usually more expensive than regular bread and difficult to find in store. And the worst? They often have terrible crumbly texture. The worst thing you want to see is a beautifully constructed sandwich just crumbles before even taking the first bite.

Roast Beef Sandwich in Sweet Potato Toasts

Sandwich built on the easiest last-minute, low-budget and gluten-free bun alternative – sweet potato toasts!

Ingredients

  • 2 Sweet potatoes sliced lengthwise
  • 1 tbsp Olive oil

Sandwich toppings

  • 6-8 slices Leftover roast beef cooled
  • 2 Radishes thinly sliced
  • 1 bunch Baby spinach rinsed
  • 1/2 Tomato sliced

Instructions

  • Coat sweet potato slices with a thin layer of olive oil⁠
  • Arrange sweet potato on a lined or non-stick baking sheet for toaster oven
  • Start toasting in a toaster oven (just to save some $$! I used my counter-top @cuisinart steamoven ) on high (6 or 7), or bake at 475F for 7 mins or until crisp and golden
  • Flip sweet potatoes and toast or bake on the other side for another 3-5 minutes
  • Build your favorite sandwich with the sweet potato toasts fresh out of oven!⁠
